Slow-cooked bone broths are the gold standard of stocks, both for their flavor and health benefits (they provide a range of essential nutrients for the health of the gut and the immune system, as well as for strong bones, vibrant hair, and radiant skin). Today renowned cooking teacher and food and health expert Myra Kornfeld will draw from her latest (co-authored) book, Cooking With the Muse, to demonstrate her broth-making techniques and share highly varied recipes that build on collagen-rich bone broth stocks (e.g., fish, chicken, beef) and special ferment-rich broths that boost health-promoting intestinal flora. The many recipes shared will include: chicken bone broth; chicken bone stock w/whole poached chicken; Thai coconut milk-fish soup; broth soup with kim chi; caramelized onion soup; ruby ginger kraut; super digestible nut fudge; and many, many others.  Her co-author, Stephen Massimilla, will fill you in on the historical and poetic context.
