Our guest, Myra Kornfeld has been a culinary professional for twenty five years. She trained at the Natural gourmet Institute for Health and Culinary Arts. She worked for six years creating vegan cuisine at New York’s Angelica’s Kitchen and where she was the head pastry chef. She is the author or co-author of several popular cookbooks, the latest being,” Cooking with the Muse…Sumptuous Gathering of Seasonal Recipes, Culinary Poetry and Literary Fare”. Myra tells us,”I teach people to cook, to eat well, and in doing so, to take charge of their health and wellbeing”. She focuses on on the quality of the ingredients as well as getting the “most nutrition out of food through the proper methods of preperation”.Lately she has been concentrating on slow-cooked stocks called “bone broths”, quality fats and fermented foods which she says,”are mostly missing from the American diet today”.
