Keynote presented by Chef Myra Kornfeld entitled, “Fat Is Where It’s At: Delicious Ways to Get the Healthiest Fats Into Your Diet” as explained in Cooking with the Muse.

Description: “The time has come to stop the demonization of good, traditional fats. Not only do good quality fats make food taste delicious, but, among other things, the fat-soluble vitamins they contain are essential to wellbeing. You’ll find out why, to quote poet Ogden Nash “There’s nothing the matter with butter,” why Julia Child remarked, “With enough butter, everything is good,” why ghee is considered divinely calming, balancing, and restorative; and why the coconut tree is called “kalpa vriksa,” which means “the tree that provides all that is necessary for living.” And that’s just the beginning. We’ll also embrace olive oil, flax oil, avocados, properly prepared nuts, and quality eggs in our satisfying, superbly healthy, scrumptious, fat-rich tastings.”
